Organic Gigli Toscani with Chickpeas & Porcini Mushrooms
This hearty recipe combining protein filled chickpeas and delicious Porcini mushrooms is bursting with aromas. The addition of fresh rosemary and a thick chickpea cream really add to the flavor profile and texture, not to mention just the right amount of salty goodness from Pecorino Romano cheese which brings everything together. This dish may have only two main ingredients, but each bite will delight all your senses.

INGREDIENTS
- 450g/15.87oz Bella Italia Organic Gigli Toscani Pasta
- 700g/21oz chickpeas
- 2 cups/500ml vegetable stock
- Fresh rosemary
- 4 tbsp extra virgin olive oil (EVOO)
- 2 garlic cloves
- 7oz/200g Porcini (or wild) mushrooms
- Handful chopped parsley
- Pecorino Romano Cheese (handful)
- Salt & Pepper
- 1 tbsp rock OR sea salt
- Water for boiling pasta
HOW TO PREPARE
Start by adding water to a large pot, leaving some space at the top and put this on the stove to boil. Once the water boils, add a tbsp of rock salt and mix using a wooden spoon until it dissolves.
Add 6 tbsp off chickpeas to a tall cup along with 6 tbsp vegetable stock and fresh rosemary. Blend this until you reach a smooth but thick consistency and leave it to the side.
Put a large pot on the stove turning the heat to medium and add 4 tbsp extra virgin olive oil (EVOO), 2 crushed garlic cloves, mushrooms and chopped parsley. Mix together using a wooden spoon then add the remaining vegetable stock along with 600g/21oz chickpeas, rosemary, salt and pepper.
Continue to stir through then put the lid on and leave to cook for 15 minutes.
Once this has been cooking for 7 or so minutes, add a packet of Organic Gigli Pasta to the pot of boiling water and cook for 8 minutes as shown on the packet instructions. Once the pasta is ready, use a hand sieve to strain it and add it to the pot with the mushroom and chickpea sauce, then mix in the blended chickpeas and stir through well.
Add a generous serve of Pecorino Romano cheese, mix using a wooden spoon then serve.
Scoop up a portion of cheesy pasta and add it into a flat plate or bowl. You also MUST add some extra sauce to the top of each plate too.
